Overnight Oats

Do you want to  know what it’s really like to  be a working mom?  Here’s a little story that pretty much sums it up…

I decided to get my shower out of the way last night.  I washed my hair, shaved, got all clean and respectable.  I knew I was going to workout this morning but I figured if I got the time consuming stuff, like shampooing hair and shaving legs, out of the way, then I could just rinse off post workout.  Yes, it’s gotten to the point that I have to  schedule showers into my day.  So… that’s what I did.  I took a “real” shower last night and then I went to the gym this morning and then came home for a quick rinse.  While in the shower this morning, I noticed that I only shaved one armpit last night.  Yep.  I went to the gym this morning and worked out in a tank top with one shaved armpit.  Isn’t that hot?  Thank god I’m married because I just ensured that all 500 men at the 24 hour fitness this morning will not be tempted to hit on me from this day out.  And I did pull-ups, just in case you were wondering.

Anyway, if you’re busy and find it hard to get both armpits shaved, much less cook a healthy breakfast, you have to try overnight oats.  It’s a delicious, healthy, lifesaving meal that you need in your life.  Guaranteed.

Here’s what you need…

Most recipes I’ve seen call for 1/3 – 1/2 cup of oats per serving but I am always hungry so I use 3/4 of a cup of oats per serving.

  • 3/4 cup of quick oats (you can use traditional rolled oats but I like the texture better with quick oats)
  • 3/4 cup of milk (I use Fairlife lactose free whole milk, but that’s because I have a lactose intolerant son and husband.  You can use whatever kind of milk you keep around.  For fewer calories, or dairy free, almond milk works well.)
  • 1 tsp chia seeds (optional, but it soaks up any extra liquid and makes it creamier)
  • 1 large spoonful of peanut butter
  • 1 tbsp of honey or maple syrup
  • dash of sea salt
  • dash of cinnamon

That’s it.  Put all the ingredients in any container with a lid, mix them up, and put them in the fridge.  The peanut butter won’t really mix in with everything but that doesn’t matter at all.  Your overnight oats will be ready to eat the next morning and will keep for 3-5 days.  Yep.  You just made breakfast for the week in 10 minutes.  Nice work.  You’re so smart, and so cool, and so healthy, and totally hot (even with one shaved pit).

Also, buy some berries and bananas so that if you happen to have 30 extra seconds in the morning, you can throw some fresh fruit on the top.

If you get sick of the regular recipe, there are a million ways to  tweak this recipe.  Check out this page for some creative flavors like chocolate or carrot cake.  Next week I’m going to try the tropical fruit flavor with mangoes, pineapples, and shredded coconut.  I’ll let you know how it tastes.

Life is Like a Box of Chocolates…


Things don’t always go as planned.  I haven’t written a post in a long time because my life has taken a complete 180 degree turn.  I’m not sure if this flip flop is for better or worse but it’s where I’m at, so I thought I would share my new life change.

In the interest of full disclosure, my nothing new for a year plan is completely down the drain, which is unfortunate, because I really did feel happier when I wasn’t worrying about all the extra stuff we think we need.  Here’s what happened.  I ended up getting a full time job and there were a lot of things I needed to buy for work.  Unfortunately, once I got busy and started buying things for work, I started to think I needed other things as well.  Under Armour workout clothes are my biggest weakness.  I could live in those comfy fleecy hoodies all night and day.  Oh wait, I do!  While I wish I could have stuck it out for the full year, I did at least learn something about what’s important and what’s not.  It’s better to try and fail than never try at all!

Anyway, life happened and I found myself needing to get a full time job.  I wanted to do something meaningful.  Something challenging.  Something where I  would have the opportunity to make a difference.  So, I applied to be a police officer.  Yes, I know, I am completely off my rocker, but we already knew that, didn’t we?  I was always interested in joining the military when I  was younger but I never did.  There is something appealing to me about the simplicity of knowing that you are going to go to work and do whatever needs to be done, regardless of how you feel, regardless of what you want.  There is something comforting in knowing that all you have to do is show up, work hard and do your best.  That’s not always true in life.  Often times things get more complicated.

So, I applied, and much to my surprise, I was selected from over 1500 applicants to attend a grueling, six month police academy.   More about that later.  But let me just clarify that I will never again, under any circumstances, let someone taze me!  Several people quit during the academy but I stuck it out and I’m now over half way through the field training program and will be getting ready for test out soon.  Wish me luck.

So far, since the day I started police academy, life has been completely chaotic.  My shift is constantly changing so sometimes I work a swing shift from 3:00 p.m. to 1:00 a.m. and sometimes I work day shift from 6:30 a.m. to 4:30 p.m.  Sometimes I get off on time and sometimes I work 4 or 5 hours of overtime.  I haven’t worked the graveyard shift yet but it might be coming soon.  Right now I’m on the swing shift so I get home from work around 1:30 a.m., hopefully.  I try to get to sleep as quickly as possible because my husband has to leave for work at 6:45 so I have to get up and take care of our son.  I get up and entertain James for a few hours and then drop him off at daycare at around 10:00 a.m.  We try to keep the daycare hours as short as possible for James.  He likes it there, but he often says he wishes he could just stay home with me.  Heartbreaking!   So then I go to the gym, take a shower, rest for a little while, clean up the house and leave for work at 2:00 p.m.  I am so exhausted that I  often question whether this job is really worth it.  Is it really possible to be a good mom and work a full time job?  Can you do both things well?  I can tell you this.  It’s really, really hard.  To all you working moms out there…  I get it.  I know how you feel.  Do you make a healthy homemade meal?  Scrape the layer of grime off the kitchen floor?  Or sleep for 5 hours instead of 4?  Only a mom would pick the floor grime!

Well, with that schedule during the week, I find the weekends are consumed with struggling to get caught up on sleep, grocery shopping, cooking, spending some much needed quality time with my family, and cleaning the house.  But, I decided that I also need some time for myself to do what I like to do, so I’m getting back to blogging.

My goal now is to try to incorporate the ideals of into my new, crazy lifestyle.  So far it has been really difficult.  We ended up renting a big house, mainly because we wanted to live in a safe neighborhood and this was all we could find.  But, it’s too expensive and to big, and we keep buying things to fill it up!  Aaaahh!  But I’m determined.  I will find some balance and get back to living my life with the ideals that I believe in, regardless of what I do for work.

So, I will write more soon, as I start to get things back under control.  I’m excited to share the ups and downs of becoming a police officer.  It has been a struggle, to say the least.  This is definitely the most difficult thing I’ve done in my life (besides raising a child), and whatever happens from here on out, I’m proud I’ve made it this far.

From living in a $400 a month open air house in Costa Rica to being a police officer in a high crime city.  Life is like a box of chocolates, you never know what you’re gonna get.
